How to Create Healthy Bowls

Plus Snack & Breakfast Ideas
Recipes used to be a struggle for me until I realized how simple it really is to eat healthy — and by healthy, I mean eating to fuel your body with good nutrition. We don't eat a lot of rice or carbs at our house. That doesn't mean they're bad — it's just not our go-to. Here's how we actually plan meals, night after night, without getting bored or overwhelmed.

The Bowl Formula

Base

  • Baked sweet potato
  • Baked russet potato
  • Butternut squash
  • Spaghetti squash
  • Cauliflower rice + edamame
  • Wild/brown rice (occasionally)

Protein

  • Chicken breast
  • Salmon
  • Chicken thighs
  • Ground beef, turkey, bison, or venison
  • Eggs

Veggies

  • Broccoli/broccolini
  • Asparagus
  • Spinach
  • Peppers
  • Jalapeño
  • Carrots
  • Onions
  • Bok choy
  • Kale
  • Mushrooms
  • Tomatoes
  • Cucumbers (in vinegar)

Seasoning

  • Everyday: onion powder, garlic powder, Himalayan salt, pepper
  • Italian: Italian seasoning + Rao's marinara
  • Mexican: Siete taco seasoning + avocado

Starter Bowls

  • Sweet potato + salmon + broccolini + Siete taco seasoning
  • Cauliflower rice + ground turkey + peppers + Siete taco seasoning + avocado
  • Butternut squash + chicken breast + kale + onion & garlic powder

Breakfast Bowls

  • Steel Cut Oats Protein Bowl — steel cut oats, cottage cheese stirred in while warm, fresh berries, cinnamon
  • Greek Yogurt Berry Bowl — plain Greek yogurt, mixed berries, drizzle of honey (optional)
  • Egg White Veggie Bowl — scrambled egg whites, spinach, peppers, topped with avocado, Himalayan salt, pepper, onion & garlic powder

Snack Ideas

  • Plain Greek yogurt with berries
  • Cottage cheese mixed into eggs or egg whites
  • Hard-boiled eggs with Himalayan salt and pepper
  • Cottage cheese with sliced cucumber
  • Turkey roll-ups with a sprinkle of seasoning
  • Handful of veggies with plain Greek yogurt dip

Sauces & Toppings

  • Greek yogurt ranch — plain Greek yogurt + garlic powder + onion powder + a splash of water
  • Avocado crema — mashed avocado + lime juice + salt
  • Tahini-lime drizzle — tahini + lime juice + water to thin
  • Salsa or pico — store-bought is fine, great on Mexican-style bowls
  • Simple vinaigrette — olive oil + vinegar + Italian seasoning

Meal-Prep Tips

  • Bake 2–3 sweet potatoes or a full tray of squash at once — they reheat well
  • Grill or bake extra chicken on the nights you're already cooking it
  • Batch-cook cauliflower rice or wild rice and portion into containers
  • Wash and chop veggies right after shopping so they're ready to go
  • Make a double batch of a sauce — most keep 4–5 days in the fridge

Dietary Swaps

  • Vegetarian: swap the protein for beans, lentils, tofu, or eggs
  • Lower-carb: skip the starchy base and double up on veggies
  • Dairy-free: swap cottage cheese/Greek yogurt for a dairy-free alternative
